By my count, on March 7. 2025, thirty two Knights helped set-up, prepare, serve, and clean up for the first fish fry of 2025. We were (in no particular order): Mike Fitzgerald, Joel Lopez, Larry Balagna, Mike Clark, Jose Hernandez, Joe Cuellar, Jeff Traub, Jorge Caraveo, Frank Salazar, Jim Kowalski, Dan Murphy, Jesse Zuniga, Jack Ramsden, Billy Callender, Antonio Razo, Jorge Echeveste, Marc Evans, Peter Perta, Greg Warr, Hector Lopez, Russell LeRoy, Lou Lemons, Pat Stepniewski, Tony Gonzalez, Efrain Ochoa, Antonio Razo, Arthur Rodriguez, Chris Kubin, James Smith, Drew Carlson, Lupe Hernandez, Morris Curlee, Adan Luna. Forgive me if I missed anyone. Work started around 2:30pm and ended well after 8pm.
It was a bit hectic because one of the deep fryers decided to stop working (some sort of problem with a valve). Dan Murphy ramrodded the outside fish frying crew; don’t know if anyone directed the inside Knights – everybody just pitched in and worked together The weather condition were almost perfect for the event and everyone seemed to have a good time serving the parish community. Rumor had that people from outside the parish community also enjoyed our fish dinner of 2 pieces of catfish, fries, hush puppies, salad or coleslaw, pickles, and drinks – yum, yum. One of the big hits was the fish taco, skillfully prepared by Efrain Ochoa, Antonio Razo and Tony Gonzalez. Approximately 270 guests were served from 5 until 7pm. The gym was filled with conversation and laughter – a very nice scene.
