Rey Estrellas, the council’s Knight of the Month for March, spent about seven years as both father and mother to his four children in the Philippines in the process of having his family eventually follow wife Elsa here to north Texas, which finally happened in 2002. So the man knows his way around a kitchen. His prowess has been on display recently in KC-related activities such as the catechist appreciation dinner, the youth spaghetti fund-raiser and the Lenten fish fry dinners. He also helped out with the preparation of hot dogs for Children’s Faith Formation’s Souper Bowl Sunday activity back on, well, Super Bowl Sunday. When he can’t arrive at the community center early enough to participate in meal fixing, he’s more than ready to roll up his sleeves and occupy the kitchen during clean-up time. Rey became a Knight late in 2011. One of his children is son Joshua, who preceded Rey in Knighthood. Rey is a custodial supervisor for Duncanville ISD; while all the kids were enjoying spring break in mid-March, Rey was among those hard at work to make sure the facilities were in tip-top shape when the students returned. He serves as an usher on Sunday mornings. Rey said being a Knight allows him to “mingle” with a lot of different people, so don’t hesitate to mingle with him.
