Catechist dinner Jan 21, 2013An impressive number of Knights was sufficiently recovered from the council’s annual Appreciation Dinner on Saturday night, Jan. 19 (many of whom also volunteered the following morning at 8157’s winter blood drive) to staff the kitchen and also clean up for the Children’s Faith Formation annual catechist dinner hosted by Deborah Garrison on Monday evening, Jan. 21. This year’s theme was the “High Seas Adventure,” with “swiffer-board” played instead of shuffleboard and disco dancing.

The Knights (along with some of their family members) kept the festivities afloat by preparing a menu of chicken fettuccine Alfredo, blackened shrimp, green beans, fried shrimp, clam chowder (lotta sea-related items here, naturally), sushi and assorted desserts for about 115 guests. Duties for some began as early as 2 o’clock that afternoon. Thanks to Al Alonzo, Juan Chapa, Rey Estrellas, Andy Goza (and daughter Madison), Tom Greco, Francisco Hernandez, Nick Kleinhaus, Hector Lopez, Leo Mattingly, Dan Murphy (and wife Pat), Jack Ramsden, Ray Rivera, Frank Salazar, Art Senato and Marce Tebbe (and wife Brenda). And a special thanks to the current First Lady of our council, Lourdes Salazar, for putting together the attractive centerpieces. Deborah, her staff and all the catechists appreciate the annual effort that the Knights put in to make the dinner special for those who volunteer to educate our young people.
