Ed and Betty O’Brien are the council’s Family of the Month for March, and March is indeed a busy time for our past Grand Knight from the fraternal years of 2004-05 and ‘05-06. Ed does the purchasing for the weekly Lenten fish fry dinners. It can be a tricky exercise to make sure there’s enough for each of the six dinners but not too much left at the finish. He started helping Ross Musso in that role and took over following Ross’ passing. “I kind of slid into it,” Ed said. “I still don’t know how.” Ed’s culinary contributions to 8157 can also be found during the fall pancake breakfasts and running the early morning crew in the Valley Ridge baseball concession stand beginning in late March. The team of Ed, Frank Hernandez and Bob Foster arrive by 8 a.m. in order to be up and running at 9. “We know what we’re going to do, so Allen doesn’t worry about us,” he said. Parents and children are somehow ready to wolf down hot dogs and barbecue sandwiches at that hour. “They come up and say, ‘We haven’t had any breakfast,’ ” Ed said. Betty often pitches in at KC functions such as kitchen help during the Winter Welcome. Their other volunteer together including ushering at the AT&T Performing Arts Center in Dallas and doing Meals on Wheels.
