[dropcaps] O [/dropcaps] f all the community activities we perform in our council, the bi-annual St. Joseph’s Residence Cookout seems to be consistently one of the more spiritually rewarding for the Knights who participate. Maybe it’s the warm welcome we receive from the staff and the smiles on the faces of the senior residents as they watch us set up with anticipation. Or maybe it’s just the satisfied look on their faces and that of their relatives after they enjoy our lunch of delicious burgers and hot dogs hot-off-the-grill, accompanied by Mike Ftizgerald’s home made baked beans, not to mention those great chocolate chip cookies for dessert. Or maybe it’s the warmth and radiance of the Bethlemite Sisters, Daughters of the Sacred Heart of Jesus, who have staffed the residence since 1955 caring for the wellness, dignity, and independence of all the elderly residents.

Whatever the reasons, we do seem to have it down to a science and we function like a well-oiled-machine and that makes the work itself fulfilling. From the time we arrive, all the Knights seem to naturally find their place and in no time at all we have everything ready to go just as the seniors come out of morning mass and their relatives start arriving. Equally impressive it must be, to watch us take it all down and clean up everything at the end with utmost efficiency.

The 15 Knights and Lady who participated were:
